Garlic Vinaigrette

Vinaigrette is a dressing where oil is combined with an acidic ingredient, like vinegar or lemon. This basic vinaigrette recipe is based on white balsamic vinegar and garlic. I used it for the Wax Bean and Roasted Pepper Salad.

Yield: 3/4 cup (180 ml)

Time: 10 minutes

Ingredients: 

  • 1/2 cup (120 ml) extra virgin olive oil
  • 4 Tbsp white balsamic vinegar
  • 1 garlic clove finely minced
  • salt and freshly ground pepper

Preparation:

In a small bowl, whisk together balsamic vinegar and finely minced garlic until well combined.
While continuously whisking, slowly pour in the extra virgin olive oil until the dressing is smooth.

Taste and adjust for salt and pepper as needed.

Use immediately or transfer to a sealed container and refrigerate. Shake well before each use.
