Creamy spicy avocado and smoked salmon are an elegant combination. Delicious recipe and done in less than 15 minutes. The perfect response for ” I need something quick”. Brunch, lunch or dinner.

Ingredients:
- 1 fresh baguette
- extra virgin olive oil for brushing the baguette toasts
- 2 small ripe avocados, roughly diced
- 1/4 cup (16 g) thinly sliced scallions
- 1/4 cup (7 g) cilantro leaves, finely chopped
- 4 Tbsp fresh lime juice or to taste
- 1 tsp fresh chopped jalapeno pepper
- 2-3 slices per serving of smoked salmon
- salad greens
- sea salt and freshly ground pepper
Preparation:
In a medium bowl, roughly mash the avocado, scallion, cilantro, lime juice, jalapeno pepper, salt, and pepper. Set aside.
Cut the baguette into 6 inches (15 cm) long pieces. Split each piece lengthwise again. Toast or grill them lightly. Brush the toasted side with a little extra virgin olive oil. Place salad greens on top. Divide avocado mix among the toasts and place it over the greens. Pile the salmon slices over it. Season with freshly ground pepper. Serve immediately.
