Chicken Salad with Turmeric Mayonnaise

Chicken salad is one of those reliable meals done in minutes when you have rotisserie chicken left-overs hanging around in your fridge. Turmeric powder, a common ingredient in curries, gives this salad an attractive color and earthy-mustard like taste. It goes well with chicken, mayonnaise and raw vegetables and on top of it checks all boxes when it comes to have something quick, delicious and very portable for lunch. Anything else?

Ingredients

  • 3-4 cups (500g) shredded left-over rotisserie chicken
  • 1 1/2 cup (150 g) celery, finely sliced
  • Zest of 1 lemon
  • 1 Tbsp lemon juice or to taste
  • 1/2 tsp turmeric or to taste
  • 1 garlic clove, finely minced
  • 1/4 tsp sugar or to taste
  • salt and pepper
  • 1/4 cup (60g) sour cream or creme fraiche
  • 1/2 cup (115 g) mayonnaise
  • 1 tsp Dijon mustard or to taste
  • 2 Tbsp fresh dill, minced

Preparation

Mix lemon zest, lemon juice, turmeric powder, garlic, sugar, salt and pepper. Stir to dissolve the turmeric. Add sour cream or creme fraiche and the mayonnaise. Stir until smooth.

Mix in the shredded chicken, celery and dill. Adjust the seasonings.

Serve with a crusty baguette or on top of salad greens.
