
Chorizo Corn Fritters with Chipotle Maple Sauce
Crispy corn fritters get a lift from Spanish chorizo and a chipotle maple sauce that balances heat and sweetness. Serve them as a lively side with grilled meats, or add a fried egg and a simple salad for an easy lunch or light dinner.
Ingredients
- Chorizo Maple Sauce
- 1/2 cup (120 ml) maple syrup
- 2 Tbsp chipotle peppers in adobo, finely minced
- 2 Tbsp apple cider vinegar, or to taste
- 1 tsp garlic powder
- 1 1/2 tsp onion powder
- salt and pepper to taste
- Corn Fritters
- 4 Tbsp olive oil
- 2 cups (350 g) corn kernels, fresh or frozen
- 5 oz (150 g) Spanish chorizo, finely chopped
- 2 scallions, finely sliced
- 2 Tbsp fresh coriander or Italian parsley, finely chopped
- 2 large eggs, beaten
- 1/4 cup (30 g) all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
Preparation
Chorizo Maple Sauce
Combine the maple syrup, minced chipotle peppers, apple cider vinegar, garlic powder and onion powder in a small saucepan over medium heat. Reduce to a simmer and cook for about 5 to 10 minutes, until the sauce has thickened slightly. It will continue to thicken as it cools, so do not let it reduce too much.
Corn Fritters
Sift together the flour, baking powder and salt in a bowl and set aside.
Place the corn kernels, chorizo, eggs, scallions, coriander or parsley and the flour mixture in a food processor. Pulse two to three times, just until combined; the batter should keep some grainy texture, so avoid over-pulsing. Taste and adjust the seasoning.
Heat enough olive oil over medium-high heat to coat the bottom of a frying pan. Drop the batter into the pan by the tablespoon, spacing the fritters apart since they will expand as they cook, which also makes them easier to turn.
Cook the fritters for about 4 to 5 minutes on each side, until golden, then transfer to a plate lined with paper towels. Check the oil level between batches and top up as needed.
Assembly
Serve the corn fritters with the chipotle maple sauce alongside.
Notes
Any leftover chipotle maple sauce can be stored in a glass jar in the refrigerator for later use.
