  • 4 pork sausages
  • 1.5 lbs (680 g) baby potatoes, halved
  • 1 bunch broccolini, trimmed
  • 3 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp dried thyme
  • salt and pepper to taste


    Preheat the oven to 400°F (200°C).

    In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, garlic powder, dried thyme, salt, and pepper until evenly coated. Spread the seasoned potatoes on a baking sheet in a single layer. Place in the preheated oven and roast for 20 minutes.

    While the potatoes are roasting, heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the pork sausages and cook until browned on all sides, about 8-10 minutes.

    Add the trimmed broccolini to the baking sheet with the partially roasted potatoes. Drizzle with a little olive oil and toss to combine. Place the browned pork sausages on the baking sheet among the potatoes and broccolini. Continue roasting in the oven for an additional 15 minutes or until the sausages are cooked through, and the potatoes and broccolini are golden and crisp.

    Remove from the oven, adjust seasoning if needed, and serve hot.
