Flexible Vegetarians
Flexitarians don't follow the rigid rules of Vegetarians and especially Vegans. Here are my guidelines for healthy eating celebrating the creativity and joy in cooking:
Rule # 1: Internalize that vegetables, legumes, whole grains and fruits are the centerpiece of a meal rather than a side dish.
Rule # 2: Use white meat from time to time, especially chicken, as well as seafood.
Rule # 3: Use salt sparingly and replace, where possible, with spices, naturally cured ham or cured sausages.
Rule # 4: Keep processed food to an absolute minimum.
