Sauerkraut Fried Rice

Sauerkraut Fried Rice is a flavorful twist on the classic fried rice, incorporating tangy sauerkraut, succulent shrimp, and strips of fluffy omelette. This quick and easy recipe serves 4 and takes approximately 30 minutes to prepare.

Ingredients

  • 2 cups (340 g) day-old Basmati rice
  • 1 cup (280 g) sauerkraut, drained and chopped
  • 16-20 large shrimps, peeled, de-veined and butterflied
  • 3 eggs, beaten
  • 1/2 cup (113 g) cashews
  • 1/4 cup (60 ml) soy sauce
  • 2 Tbsp vegetable oil
  • 1 Tbsp sesame oil
  • 2 green onions, sliced
  • salt and pepper to taste

Preparation

Heat vegetable oil in a large skillet or wok over medium-high heat. Add butterflied shrimp and cook until pink, then remove from the skillet and set aside.

In the same skillet pour the beaten egg until it is set and the base is golden (2 to 3 minutes). Remove the omelette and let it rest a bit. Roll it up, and cut it into strips.

Add cooked rice, sauerkraut and soy sauce to the skillet. Stir well. Add the cooked shrimp and omelette strips back into the skillet. Mix until evenly combined. Drizzle sesame oil over the mixture and stir in sliced green onions.

Season with salt and pepper to taste.

Serve warm.
