Two-Bean Salad with Feta and Fresh Dill

Fava beans are among the first welcome signs of spring. One of the oldest cultivated plants in the Mediterranean, they have long been valued for their delicate flavor and versatility. Young green favas are especially prized in salads, dips, and simple side dishes, while dried favas remain a year-round staple throughout the Middle East and North Africa.

Fresh fava beans do require a little patience. Once shelled, the beans are usually blanched and peeled, as their outer skins can be tough and difficult to digest. For convenience, frozen shelled fava beans are an excellent option and are widely available. Lima beans also make a good substitute when favas are hard to find.

Ingredients:

  • 2 cups (400g)fresh or frozen favas or lima beans
  • 1lb (450g) fresh green beans, ends trimmed and halved, if too long
  • 1 medium shallot, finely sliced
  • 2 garlic cloves, finely minced
  • 1 cup (120g) feta cheese, roughly crumbled
  • 2 Tbsp red vinegar or to taste
  • 1 tsp Dijon mustard, or to taste
  • 2 garlic cloves, finely minced
  • 1/3 cup (80 ml) extra virgin olive oil
  • 1/4 cup (7g) fresh dill, finely chopped
  • 1/4 cup (7g) fresh Italian parsley, finely chopped

Preparation

Bring water to a boil in a saucepan. Add salt. Add the green beans and lower the heat to a simmer. Cook green beans for about 5 minutes or until beans are “al dente”. Use a skimmer, so that you do not have to drain the cooking saucepan. When done, plunge green beans in cold water, drain and set aside to cool . .

Bring the water back to a boil. Drop the favas or lima beans into the boiling water. Reduce the heat and cook the beans until they are just tender or according to package instructions. Drain and run them under cold water. Drain well and set aside.

Add favas or lima beans to the green beans in a serving bowl. Let them cool while you prepare the dressing. a small bowl, whisk vinegar, mustard and garlic until smooth. Add the olive oil, salt and pepper. Stir again. Pour it over the beans, add the sliced shallot and toss. Let it marinate until ready to serve.

Just before serving add the feta cheese and parsley. Adjust seasonings, if necessary.
