
Orzo Pilaf
It is easy to get creative with orzo. A mini-pasta shaped like a large rice grain that lends itself to a variety of meals whether as a side choice, salad, or in a soup. It is quickly done, tasty, and light.
Ingredients
- 1 cup (190 g) orzo
- 3 Tbsp olive oil
- 1 small onion, finely chopped
- 3 cups (750 ml) chicken or vegetable broth or water
- salt and freshly ground pepper
- 1/4 cup (7 g) flat-leaf parsley, finely chopped
Preparation
In a saucepan, heat oil olive over medium heat. Add onion and sauté it for about 5 minutes.
Add orzo and cook it stirring at all times for about 3 minutes.
Add chicken or vegetable broth or water, salt, and pepper. Bring it to a boil and immediately reduce the heat to a simmer. Cover saucepan and cook orzo for about 5 minutes or until “al dente”. Drain orzo and fold in the parsley.
Serve with Parmesan and a drizzle of olive oil if you like.
