Tzatziki (Greek Yogurt Cucumber Sauce)

Tzatziki is a refreshing garlicky cucumber yogurt sauce or dip (depending on how liquid you want it to be), which accompanies many Greek dishes. Its preparation is quite simple. It seems everyone in Greece has a different recipe for it. I, for example, like to add feta cheese to it. In my opinion, the feta cheese adds the extra kick.

Yield: about 4-6 servings

Time: 30 minutes plus chilling time

Ingredients:

  • 2 cups (450 g) Greek yogurt
  • 1 European cucumber, seeded and grated
  • 3 garlic cloves mashed to a paste
  • salt and black pepper
  • 5 oz (140 g) Feta cheese, coarsely chopped
  • 2 Tbsp freshly chopped mint
  • 1 Tbsp of lemon juice or to taste

Preparation:

Grate the cucumber coarsely and put it in a colander padded with paper towels. Sprinkle cucumber generously with salt. Place the colander over a bowl and let the cucumber drain for about 15 minutes. Rinse grated cucumber under running water to remove excess salt and squeeze as much water as you can from it.

Mix yogurt, garlic, salt and pepper in a bowl. Add grated cucumber, mint, lemon juice and coarsely chopped feta cheese. Refrigerate until ready to serve. Adjust seasoning if necessary before serving.
