Spinach with Caramelized Onions

Caramelizing onions is simple but demands patience and not straying too far from the stovetop. The reward is an intensely sweet flavored onion that brightens up this spinach dish. A pleasing recipe!

Ingredients:

  • 1 1/2 lbs (675 g) young spinach leaves, washed and spun dry
  • 1 large yellow onion, sliced thinly
  • 2 garlic cloves, finely minced
  • 3 Tbps extra virgin olive oil + extra for drizzling
  • 2 Tbsp balsamic vinegar
  • salt and freshly ground pepper
  • juice of a lemon (optional)

Preparation:

Heat 2 tablespoons olive oil in a skillet over medium-high heat. Add the onions. Cook stirring occasionally until they begin to caramelize. Lower the heat and continue cooking for about 20-25 minutes. If onions brown to quickly add water by the tablespoon and reduce the heat to a simmer. Add garlic and balsamic vinegar and cook until onions have a nice brown color and are sweet in taste. Remove onions from the skillet and place it on a plate and keep it warm.

Add 1 tablespoon olive oil to the same skillet and heat it over medium-high heat. Add the spinach and cook it just until wilted. Season with salt and pepper. Return caramelized onions to the skillet with the spinach. Toss it lightly and adjust seasoning if necessary. Drizzle it with some lemon juice and extra olive oil if you like. Serve warm.
